Braised cucumber

Take a large cucumber or a few smaller ones, peel them carefully with a cross peeler . Of course, that’s not a salad cucumber but one for cooking. Slice them into 1 cm thick pieces, salt and pepper them, lay them aside. Peel and slice a bigger onion, mince 3 or more garlic cloves and – if you like – you can add a carrot – sliced, of course! – and put all these ingredients into a hot frying pan with oil and leave them steaming it slightly,  don’t brown them. Add the cucumber pieces into the pan and let them steam it for a few minutes. Then pour a cup of hot vegetable broth into it and let it simmer gently for about 10 minutes. Don’t forget to spice it with eg. paprika as you like it. Now we’re have to add some mustard, a bit of crème fraich and dill, very important for colouring and creating flavour.
